Add a new twist to the classic Banana Nut Bread - and keep it low fat!
Ingredients
1 1/2 cups of all purpose flour
1/2 tsp sea salt
1 1/2 tsp baking soda
2 eggs beaten lightly
2 ripe bananas (mash to make 1 cup)
1/2 cup low fat vanilla yogurt
3/4 cup of brown sugar
1/4 cup maple syrup
1/2 - 3/4 cup of raisins
Optional*
1 sliced banana
1 tsp cinnamon
1 tsp ground MRC Italian Caffe Instensa Passione Espresso
1 cup of Nutella
Directions
1. Preheat oven to 350 degrees (F)
2. Lightly grease bread pan with veggie oil
3. In a large bowl, whisk flour, sea salt & baking soda
4. In a separate small bowl, add 2 mashed bananas, yogurt, syrup and brown sugar to the gently beaten eggs
5. Slowly mix wet ingredients to dry, stirring lightly
6. Optional- add sliced banana on top of bread before baking
7. Pour ingredients into greased bread pan and cook 35-40 minutes
8. Let cool, and then enjoy a slice with a freshly brewed cup of MRC coffee!
*Optional
Mix cinnamon, MRC espresso and Nutella and spread atop baked bread while it's cooling
